Cooking Directions

  1. Quarter the vegetables.
  2. Heat oil in a stock pot. Add onion, celery, carrots, green onion, garlic, parsley, thyme, and bay leaves.
  3. Sauté for about 5 minutes on high.
  4. Add salt and water, cover and bring to a boil.
  5. Let boil 5 minutes then lower heat and simmer, uncovered, for 60 minutes.
  6. Strain vegetables.
