- Quarter the vegetables.
- Heat oil in a stock pot. Add onion, celery, carrots, green onion, garlic, parsley, thyme, and bay leaves.
- Sauté for about 5 minutes on high.
- Add salt and water, cover and bring to a boil.
- Let boil 5 minutes then lower heat and simmer, uncovered, for 60 minutes.
- Strain vegetables.
